First Pioppino Mushrooms
This was the first batch of pioppino mushrooms (Agrocybe aegerita) to sprout! Also known as black poplar mushrooms, these came out plump with a beautiful brown color. They have especially high protein content, and were cultivated by the Greeks and Romans as far back as 2,000 years (1).
Several compounds have been isolated from pioppino mushrooms shown to have anti-tumor and anti-inflammatory properties (2).
